Pancetta Wrapped Asparagus with Garlic Butter King Oyster Mushrooms
This dish is so simple to make and is delightfully delicious. All it takes is a skillet or frying pan and a few simple ingredients. If you like bacon, then you’ll like pancetta. One of my favourite types of mushrooms is the King Oyster mushroom and they taste great with a little butter and garlic.
Ingredients:
- Asparagus
- Pancetta
- King Oyster Mushrooms
- 1 tbsp of minced garlic
- 1 tbsp of olive oil
- 1 tbsp of butter
- 2 tbsp of water

Directions:
- Pre-heat frying pan or skillet on medium heat
- Add olive oil to pan
- Wash asparagus and trim the bottom of the stalks
- Wrap a slice of pancetta around each stalk of asparagus
- Pan fry the asparagus wrapped with pancetta and turn occasionally until the pancetta is crispy and cooked (approximately 5 minutes)
- Place on serving plate after cooking
- Wash and slice the mushrooms
- Add butter to the frying pan or skillet add the King Oyster mushrooms
- Add the 2 tbsps of water to the pan and flip King Oyster mushrooms occasionally over 2 minutes
- Add the minced garlic and cook the mushrooms for another 2-3 minutes (flip occasionally)
- Serve with pancetta wrapped asparagus and enjoy
