Spaghetti Squash with Chicken, Asparagus and Sweet Pepper
This is a healthy recipe that is perfect for dinner. Spaghetti squash can simply be made stringy like noodles with a fork after baking it. It makes a great substitute for spaghetti pasta and you can combine it with many recipes.
I decided to make a mix of vegetables and chicken for this faux pasta dish. The colours are perfect for a Fall meal and tasty with fresh herbs.
Ingredients:
- 1 Spaghetti Squash
- 2 Skinless chicken breasts chopped into cubes
- 3 leaves of fresh basil chopped
- 2 tablespoons of minced garlic
- 4 mini pearl red onions sliced thinly (or 1/2 an onion)
- Asparagus
- 1/2 a sweet pepper/bell pepper sliced and chopped (orange or red)
- 1 medium sized tomato chopped
- Salt
- Pepper
- Olive oil
- 1 tablespoon of butter (optional)
Directions:
- Cut the spaghetti squash in half with a sharp knife (scoring the squash first sometimes helps when cutting it vertically in half)
- Preheat oven to 375 degrees and bake the two halves of the spaghetti squash face down on a baking sheet for 30 minutes
- Wash the asparagus and cut into approximately 1 inch pieces and steam for 10 minutes while squash is baking
- Preheat frying pan on medium heat on the stove and add 2 tablespoons of olive oil to the pan
- Add minced garlic, sliced onions, basil to the pan and stir
- Add chicken cubes seasoned with a pinch of salt and pepper to the frying pan and stir frequently for approximately 10 minutes (until chicken is cooked)
- Add chopped tomatoes and sweet pepper to the pan and stir for approximately 3-5minutes
- Add the steamed asparagus to the pan last and stir in with chicken and other vegetables
- Remove the spaghetti squash from the oven after baking and let cool for a couple minutes
- Melt 1 tablespoon of butter for 20-30 seconds in the microwave (optional)
- Place half of the spaghetti squash face up on a serving plate
- Use a fork and pull it through the spaghetti squash flesh so that the inside of the squash becomes stringy
- Add 1/2 a tablespoon of melted butter into the spaghetti squash and mix in for a buttery flavour (optional)
- Place the chicken and vegetable mix on top of the spaghetti squash and serve
I like this dish because it isn’t as heavy as a traditional pasta dish and all the ingredients are fresh and easy to get at your local supermarket. I hope you enjoy this healthy spaghetti option as much as I do.
