Gnocchi and Tomato Sauce – Italian Pasta

Fresh homemade pasta is the best. My Italian friend doesn’t cease to impress when he makes homemade gnocchi and this time I got to see him make it by hand.

Gnocchi is made with mainly potato and flour and cooked like other pastas.

My friend floured his counter top and kneaded the dough into ropes. He then cut it into smaller pieces to make gnocchi. Final step was to use a fork to make the ridges. The fresh gnocchi can be cooked right away or can be frozen.

Gnocchi is boiled in salted water in a large pot until tender. Stirred gently until they are tender and float to the top.

Tomato sauce can be made prior or heated at the same time as the gnocchi being cooked. The final step is mixing the gnocchi in the tomato sauce to complete the meal (save some of the gnocchi cooking water for the mix). Belissimo!
