Shrimp, Chicken, Pork and Pancetta Fried Rice
If you like Chinese food and fried rice this recipe is an easy one. You can cook the entire dish in one pan or if you have one a wok (excluding the rice). Fried rice is made traditionally in a wok with steamed rice, vegetables and meat. The great thing about fried rice is you can make it with fresh ingredients or if you have any leftover meat you can also use the leftovers like roast chicken/steak or pork chops and it will usually taste just as good. Pork, chicken, shrimp and beef are always good additions to fried rice and if you aren’t a fan of meat you can improvise with your favourite vegetables. This recipe is made with a variety of meats and shrimp which complement each other well.
Ingredients:
- 1 Pork Chop
- 1 Skinless Chicken Breast
- 5 Slices of pancetta or bacon
- 10-15 Shrimps
- 1.5 Cups of white rice (uncooked)
- 5 Stalks of chopped green onion
- 1 Carrot chopped
- 5 King Oyster Mushrooms chopped
- 2 tbsp of Soy sauce
- 2 tbsp of Oyster sauce
- 1 tsp of Black pepper
- 2 tbsp of Minced garlic
- 3 Eggs
- 4 tbsp of Olive oil
Directions:
- Cook the white rice in rice cooker or boil in a pot (set aside for later after it is cooked)
- Preheat a large frying pan or wok on medium heat
- Add and fry pancetta for approximately 5 minutes (flip once) or until crispy
- Remove the pancetta and place into a plate with paper towel to remove some of the oil
- The fat/oil left from the pancetta should stay in the pan
- Whisk eggs in a bowl and cook in the same pan
- Mix the egg until it is fully cooked in the pan with a spatula (should break up the egg into smaller pieces)
- Remove the egg and set aside for later
- Add 1 tbsp of olive oil to the pan
- Add a pinch of salt and pepper to season the pork chop and chicken breast and fry the chicken breast and pork chop until it is cooked (approx. 5 minutes per side)
- Remove the chicken breast and pork chop from pan and let it sit a while before chopping them into smaller pieces
- Add 1 tbsp of olive oil to the pan
- Add the shrimp to the pan for approximately 3 minutes on each side
- Add the mushrooms, minced garlic, green onions and carrots to the pan with the shrimp and stir until shrimp is cooked
- After the vegetables and shrimp are cooked you can add the 2 tbsp of olive oil to the pan and throw the chopped chicken, pork chop, egg and crumbled pancetta back to the pan/wok
- Add the rice to the pan and stir all ingredients
- Add the soy sauce, oyster sauce and black pepper and continue to mix all the ingredients in the pan/wok
- Serve and enjoy
Fried rice can be eaten as a meal by itself. But, if you like to have more vegetables with your meal you can add your favourite vegetable side dish. I decided to add a little more greens and made some Gai Lan (aka Chinese broccoli). I simply pan fried them with olive oil garlic and a 1 tablespoon of oyster sauce for approximately 5 minutes.
