Fig and Goat Cheese Bruschetta with Caramelized Pecans
This is a great appetizer to make and enjoy with a group of friends or family. If you like figs this recipe pops with flavour.
It requires the following ingredients: dried mission figs, fresh orange juice, a little orange zest (grated orange rind), chopped fresh rosemary, chopped orange and sugar.
These ingredients will need to simmer in a pan to make the fig topping for the bruschetta. It should simmer for about 10-15 minutes until the figs are soft.
After making the fig topping you are ready to caramelize the pecans:
- Add brown sugar to a sauce/frying pan between low and medium heat
- Add a tablespoon of water or butter to mix the brown sugar into a thick liquid form.
- Mix the crumbled pecans into the pan to lightly toast them and they will caramelize in the pan with the sugar.
- Remove the pecans from the pan to cool.
The same method can be used to caramelize any nut you prefer (eg. almonds or walnuts) and the caramelized nuts are also a great topping over vanilla ice cream too.
The finished product is pretty delicious. The french baguette bread is toasted for a couple minutes while broiled with the fig topping, goat cheese and pecans. Sweet and savoury what more can you ask for.

This same topping can also be used to make a great sandwich with Prosciutto. I added it to a croissant to make a sandwich and it was yummy.
